So my mom makes the best blueberry muffins ever... They're SO good, in fact, that I "re-invent" them with different types of berries and flours, so that I can make them more often without my husband getting sick of them ;)
Today I decided to make them with blueberries. And partridgeberries. And raspberries.
Preheat oven to 350 F
Blend:
1 + 1/4 Cups sugar
1/2 Cup (1 square) butter or margarine (softened or melted)
2 eggs
1 + 3/4 Cups flour (I usually use 1 +1/2 Cups white, and 1/4 cup whole wheat)
2 tsp. baking powder
1/2 Cup milk
-----------------------mix until smooth.....like THIS!! Now stick a spoon in and eat a little. Mmmmmm :)
2 cups of berries (works with ANY kind...or 3 kinds at once...)
1/4 Cup flour
2 tsp sugar
-----------------Mix together, then stir in with the rest of the recipe (by hand, not with an electric mixer)
Spoon into 12 large muffin cups ( I use the silicone, re-useable ones); bake for 25-30 minutes.
Sooooo while we're on the topic of berries....remember when you used to only use fresh berries, and would have to run to the store and buy berries whenever you decided to bake something?
Yah, me neither.
Here in my little Mountain Region, you can't just run to the store for berries. You CAN run to the store (but you might run into a bear or pack of wolves...), but unless your baking day randomly falls on "produce day" (the once-a-week-if-we're-lucky day that the plane comes in with all sorts of fresh fruits, veggies, and dairy), you're going to be running back home empty-handed. So my choices are: a) Pick the berries myself; b) Buy the berries from someone else who just picked them (my personal favourite!); or c) Wait until produce day, and then annoy the whole town by buying all the blueberries and raspberries on the shelves, so I can take them home, separate + wash them, and freeze them. After eating a couple handfuls of each.
